Jenny McCarthy est née le 1er novembre 1972 à Chicago, Illinois (Etats-Unis). En 1992, elle cherche à financer ses études d'infirmière en voulant travailler comme modèle. Mais les agences lui trouvent trop de rondeurs. En 1993, elle pose comme Miss Octobre dans le magazine de charme Playboy. L'année d'après, elle est élue par les lecteurs de Playboy, Playmate de l'année. Forte de ce succès, elle quitte Chicago pour Los Angeles pour entreprendre une nouvelle carrière.
